I am in the process of PLANNING a motorcycle trip from Florida to Anchorage. Need tips on places to stop?

There are 4 of us planning on riding our motorcycles from Daytona Beach to Anchorage, Alaska. We have our schedule down and will do the trip in 40 days. We wonder if any of you have made the trip along the Alcan Highway and if you have any favorite restaurants and motels that you would like to recommend.
