What to do for a week in Orlando?

We are going to Orlando for a week long vacation! We figured getting a 3 day Disney pass would be plenty (Magic Kingdom, MGM, and EPCOT). What should we do the other 4 days? We obviously want to go to the beach some of those days so Is Daytona Beach worth the drive? Or should we go to Cocoa or New Syrma? I enjoyed the waves at Daytona a few years ago..for boogeyboarding, etc. But what are some other cheap/fun must see things to do in/around Orlando?
